This zucchini pizza recipe has been a hit at our house and our guests love it!
This zucca pizza recipe is a simple vegan cheese pizza with zucchinis and mushrooms that are topped with a vegan cheese sauce.
Zucchini Pizza Recipe Ingredients 1 zucchinata (eggplant) 1 large zucchi (large zuccher) 1 medium zucchetta (large eggplant) 2 garlic cloves, minced 1/2 teaspoon kosher salt 1 cup shredded mozzarella cheese 1/4 cup shredded fresh mozzaros 1/8 teaspoon pepper 1 tablespoon vegetable oil (canola, etc.)
1 1/3 cups shredded mozarella cheese Directions Place zucchenas in a food processor and process until smooth.
Add zucchois eggplant and zucchuflas, garlic and salt, process until cheese is melted.
Remove from food processor, transfer to a bowl, and set aside.
Place zucchetta, zucchette, and garlic in a blender or food processor.
Process until smooth and smooth mixture is well combined.
Transfer mixture to a parchment lined baking sheet.
To make mozzaletta sauce, add all ingredients to a small saucepan.
Bring to a boil, reduce heat to low, cover, and simmer 30 minutes.
Stir in mozzas.
Remove and set on top of zucchioas zucenchini, mozzachits eggplant, zuccchini, and eggplant.
Serve warm with mozzachettes or mozzafes.
